Hazard Analysis and Critical Control Points, developed in the 1960s so food for American astronauts would be safe. Codex Alimentarius formalized its seven principles in 1993. HACCP based controls are now required for food businesses in the European Union and for major sectors such as meat, seafood and juice in the United States.
